It’s not at all that common to find kitchens with a wall of windows and natural light. Often they’ll be in cramped and narrow cave-like basements without a window out into the world. Mark says that the space, which contains 3 kitchens and an office connected by a long hallway, can be cold in the winter when the heat’s not on in off hours if there’s no one else there. Heard that they’re putting in air conditioning for the summer which seems like a luxury if you know anything about working in hot restaurant kitchens. Not a bad place to spend your days.
