brownie experiment

Mark tried a few brownie experiments yesterday. We brainstormed a few ideas and I thought that maybe piping the dulce de leche into an individual muffin-like shape might do the trick, but unfortunately the caramel sunk to the bottom, despite trying to pipe it on top, and it made the brownies hard to pop out of the molds because it was so moist at the bottom. Too bad…the mini brownies were too cute. We may still try to do small individual brownies with flavors that don’t require a tricky filling, but for now, we’re going to pipe more dulche de leche into the standard square brownie to achieve as much of that same experience as our sandwich brownie. Unfortunately, Valrhona chocolate isn’t cheap or else we’d be tempted to do many more experiments, not to mention there’s only so many brownie test batches we can store in our house!

    Those look really good. Keep on experimenting. I can’t wait to see what else you guys make. My favorite item from last weekend’s Brooklyn flea was the brownie. Espresso dulce de leche…yummy!

    I’d love to “store” some of those brownies in my house! I like hearing about your experimentation process to develop the best brownie, and look forward to more stories of man vs dulce de leche.
