In another amazing marker of where-is-this-year going, we’re already thinking about Mother’s Day. This year we have a new cookie to put into our gift boxes – a fennel and olive oil shortbread. The olive oil, which replaces half of the butter in the recipe, gives the cookie a rich, crumbly texture and flavor, while the fennel adds a mild hint of licorice to the mix.
